Categories are away of grouping articles in a blog which have a similar theme. As a work-around to create Categories in Sandvox, I have used List of Link pages that are not shown in any index and Category words in a Rich Text pagelet to link to the corresponding List of Links page. The basic process is: I publish the blog page, go to the page in Safari, create a Links page or select one already created, add the link in Sandvox, re-publish site changes.

It's fiddly but simulates the effect of Categories commonly seen in blogs.
